Baking

so today my normal routine has been disrupted for various reasons...
i need to bring my bike by the shop before next week's race and next week i am getting my hair cut so wanted to get it looked at this weekend - but they are only open on saturdays...
and instead of getting up and trying to fit in a ride with everything else, i decided to bake first thing instead...
i am pleased with the cake aspect of the vanilla whoopie pie - although it said it would yield 24 and i got 15...  i think mine are too big...  oh you can go so many places with that last sentence
and then the fruity creamy filling that looked so good in the picture?  WOW!!! can you say sweet?!?!?  I was thinking it would be more buttery but it truly is mostly confectioners sugar...  the raspberry is a nice offset as it is not that sweet of a fruit but was thinking it would be a little less sweet...
so we will bring these to this evening's festivities but i think it will be a back to the drawing board process...
maybe i will make that my dessert of choice over the next 12 months...
